(1) Avocado Chicken Wraps (Servings: 4)
Ingredients: 4 tortillas (warmed) 1 cups cooked chicken (sliced, shredded or diced) 1 ripe avocado (diced) ½ cup cheddar cheese (shredded) ¼ cup sour cream ¼ cup cilantro (chopped) Directions: Step 1: Mix the cooked chicken, diced avocado, sour cream and cilantro in a bowl. Step 2: Top a warmed tortilla with ¼ of the mixture. Sprinkle with cheddar cheese. Roll up. Step 3: Repeat step 2 for the remaining tortillas.
(2) Lemon Garlic Salmon and Asparagus (Servings: 4)
Ingredients: 1 pound salmon fillet (cut into 4 fillets) 1 bunch asparagus (trimmed off woody ends) 2 cloves garlic (minced) 2 tablespoons lemon juice 2 tablespoon olive oil 2 tablespoons sea salt 2 tablespoons fresh cracked black pepper Directions: Step 1: Heat a pan with a tablespoon of olive oil. Add the salmon fillets and asparagus. Season with sea salt and black pepper. Cook for 3 minutes on each side. Step 2: Add the minced garlic and lemon juice. Cook the garlic until it turns to brown. Then, turn off the heat.
