Quinoa with soft-boiled egg
Ingredients
½ cup quinoa
1 egg
1 cucumber, diced
Instructions
Rinse the quinoa.
Combine the rinsed quinoa with water into a medium pot. Bring to a boil.
Decrease the heat and simmer until all liquid has absorbed for about 10-20 minutes.
Boil an egg for 6 minutes and place it into ice water for a minute, slice it in half
